Buying a half steer is going to make me much more conversant on the various cuts of beef and what to do with them.  We couldn’t quite get one of the boneless chuck roasts into the freezer on Friday so we decided to defrost it.

Tim and I drove to Litchfield, CT yesterday to pick up our dry-aged and butchered half steer.  The steer is from White Flower Farm and was beautifully butchered by Litchfield Locker and Processing.  We luckily picked up exactly the right amount of beef to fill
